Les Noizons brings a specific Pommard vineyard identity to Louis Billard's range, combining Pinot Noir with the site's clay-limestone soils. Fermentation takes place in concrete, while maturation uses oak barrels of different sizes and previous use. Cellar work includes indigenous yeasts, gravity-assisted racking and gentle filtration before bottling. Billard developed his approach through experience in Burgundy, South Africa and Australia, with the stated aim of making fine wines that respect their origins and belong at the table. Here, the named vineyard remains central to a project shaped by close attention to individual terroirs.
