Description

Les Preuses is Billaud-Simon’s Chardonnay-based Chablis Grand Cru. Its name evokes stone and the ancient Roman road that ran beside the vineyard. In the estate’s description, the clay terroir finds expression in a powerful, incisive palate. Floral and creamy notes combine with honey, dried fruit and mineral, iodine-like nuances in the bouquet. Citrus returns on the palate, where a direct opening leads into a clearly defined, substantial centre. The recommended serving temperature of 10–12 °C accompanies this layered interpretation of one of the domaine’s Grand Cru sites.
