Description

Le Sous Bois by Billecart‑Salmon is a non‑vintage Champagne cuvée, entirely fermented in oak and blended from the three traditional Champenois grape varieties. The blend composition (reported for the 2017 base) is Chardonnay, Pinot Noir and Pinot Meunier, with reserve wines dating back to 2006. It is released as an Extra Brut and is aged on the lees for about five years, offering a fuller structure and oak‑influenced aromatic complexity.
