Description

Vieilles Vignes Françaises preserves a rare link with Champagne before phylloxera. Bollinger makes it from ungrafted Pinot Noir in the Chaudes Terres and Saint-Jacques clos at Aÿ, retaining dense traditional planting and propagation by layering. These small vineyard sites are cultivated using historic practices, while vinification takes place in old oak barrels. The cuvée is always vintage-dated and continues its development through ageing on the lees, followed by manual riddling and disgorgement. Its distinctive identity comes from the meeting of an unusual living vineyard heritage and a carefully maintained continuity of craftsmanship.
