Description

Derthona Scaldapulce is Borgogno’s Timorasso selection from the eastern, higher part of the namesake vineyard in Monleale. The project brings the estate’s focus on individual origins, developed through its Barolo crus, to the Colli Tortonesi. Hand-picked grapes receive brief cold maceration, and the juice ferments spontaneously in concrete. Maturation on the lees in stainless steel is followed by rest in bottle. The profile is intense and complex, with mineral suggestions; on the palate, savouriness accompanies body, structure and persistence in a white intended to develop over time.
