Description

N.P.U., short for Nec Plus Ultra, grew from Bruno Paillard's most ambitious project and is produced only from harvests selected for this cuvée. Chardonnay and Pinot Noir come exclusively from Grand Cru villages and are blended in equal proportions. Only first-press juice is used; the wines ferment in small, previously used oak barrels before blending and extended maturation on the lees. Further resting time is allowed after disgorgement. The bottle's identity is therefore built as much on the selection of vineyard origins as on the patient sequence of work in the cellar.
