Description

Renaud Bruyère and Adeline Houillon's En Aspis is an Arbois made from Poulsard, also called Ploussard in the Jura. The couple's work centres on small parcels, with red-wine vineyards on the hills near Pupillin, above Arbois. Cultivation follows biodynamic practices and harvesting is manual. Ploussard production uses semi-carbonic maceration and spontaneous fermentation; the wine matures in used wood and is bottled without fining, filtration or added sulphur dioxide. The cuvée belongs to an artisanal approach in which vineyard management and restrained cellar intervention remain closely connected.
