Description
A still white wine from the Côtes du Jura appellation made from Chardonnay grown around Rotalier. The “Varron” cuvée displays a taut, mineral-driven profile with white-fruit aromas and subtle toasted notes from barrel aging; spontaneous fermentation and sur lie élevage add texture and complexity. The vineyard and cellar work follow organic/natural-minded practices and maturation is commonly managed using ouillage.
