Nuvola Pas Opere 2019 from Ca del Vent is a méthode classique sparkling wine (VSQ) from the Colline dei Campiani in Cellatica, Lombardy. It is an assemblage of Pinot Noir and Chardonnay (reported composition roughly 52% Pinot Noir, 48% Chardonnay) with an extended lees aging that produces a fine mousse and added complexity. On the palate it is tense and saline with lively acidity and aromas of citrus, white flowers and light bready notes; it pairs well with raw seafood and delicate fish dishes.
