Produced by Camille and Guillaume Boillot, this Saint‑Romain "Sous le Château" is a white from the Saint‑Romain appellation (Côte de Beaune) made from 100% Chardonnay. The fruit comes from the Sous le Château climat, where calcareous‑clay soils and south‑east exposures contribute freshness and mineral character. Vinification includes partial oak ageing (about 12 months), adding texture and balance. It can be enjoyed early or cellared for several years.
