Fiano Paone

Description

Paone is the Fiano from Cantina del Barone, the Sarno family estate in the hills of Cesinali, in Irpinia. Its name refers to the peacock and recalls the baron who once owned this land. The vines grow on loose soils of volcanic origin, with bedrock close to the surface. Grapes are harvested by hand into small crates and gently pressed as whole bunches, with brief contact in the press. Fermentation takes place in stainless steel without added yeasts, followed by maturation on the fine lees in the same material and further ageing in bottle.
