Description

Les Chaumées is one of the white Premier Crus Caroline Morey makes in Chassagne-Montrachet. Its Chardonnay comes from a parcel planted in the 1950s, part of the vineyard heritage around which she established her domaine. Cellar work relies on indigenous yeasts and 350-litre barrels, chosen to support the wine without allowing oak to dominate. During maturation, the lees remain in contact with the wine without stirring. This is an expression of Caroline’s measured approach, keeping the substance of the Chardonnay and the identity of the vineyard at the centre of the finished wine.
