Description

Bisò is Cascina Lieto’s Nebbiolo, first produced by Rie and Hiroto Sasaki in 2020. Its Piedmontese name refers to a jewel and accompanies a very small-scale production. In this vintage, destemmed grapes ferment in open vats without temperature control, with manual punch-downs. After pressing, the wine rests in used barrels for two winters before bottling without fining or filtration. Further bottle ageing precedes release. The process reflects the couple’s patient approach: observing the fruit closely and allowing the pace of cellar work to accompany its development rather than imposing a hurried timetable.
