Description

Cervaro della Sala comes from Antinori’s Umbrian estate near Orvieto. Chardonnay meets a small proportion of Grechetto in a white conceived to develop complexity over time. Its name recalls the Monaldeschi della Cervara family, associated with the castle’s history. The first vintage, produced in 1985 by Renzo Cotarella, helped establish malolactic fermentation and barrique maturation among Italian whites. The estate’s limestone and clay soils, rich in marine fossils, provide the setting for a wine built around the meeting of local identity and an exploratory approach to winemaking.
