Description

Muffato della Sala explores the white-wine vocation of Antinori’s Umbrian estate through grapes affected by noble rot. Its blend brings together Sauvignon Blanc, Grechetto, Traminer, Sémillon and Riesling. Morning mists encourage Botrytis cinerea, which reduces water in the berries and concentrates their sugars and aromas. The vineyards have clay soils rich in marine fossils, and hand harvesting requires repeated passes to choose suitable bunches. Further sorting at the winery precedes gentle crushing. First made from the 1987 harvest, this is a sweet wine produced in limited quantities.
