Description

Nibbio della Sala comes from a small Chardonnay vineyard on Monte Nibbio, close to the Umbrian castle. Its predominantly northeastern exposure, elevation of around five hundred metres and stony limestone soil create conditions particularly suited to preserving freshness. Hand harvesting and gravity handling accompany winemaking that includes fermentation in French oak and extended bottle ageing. The producer emphasises its focused, mineral character. Made entirely from Chardonnay, it continues the exploration begun at Castello della Sala with Cervaro, while giving this specific hillside and grape variety a distinct expression of their own.
