Au Contraire 2016 from Cavalleri is a Franciacorta DOCG Pas Dosé vintage sparkling wine produced in Erbusco, Lombardy. The 2016 release is largely composed of Pinot Noir; the Au Contraire bottlings are characterized by extended lees aging and a structured profile. Serve chilled (6–8 °C) and pair with dishes that can stand a more structured sparkling wine.
