Description

Chanterêves' Aloxe-Corton Premier Cru Les Paulands comes from Pinot Noir grown beside the Corton Les Maréchaudes grand cru, on gravelly limestone soil. Winemaking uses whole bunches and indigenous yeasts in wooden vats, with gentle pump-overs and limited foot treading towards the end of maceration. Fermentation finishes in stainless steel; the wine then moves into used barrels before returning to tank on fine lees ahead of bottling. Without fining or filtration, the cuvée keeps the relationship between fruit, vineyard origin and gradual maturation at the centre of its cellar approach.
