Description

Bas des Ees is Chanterêves' Aligoté from the heights near Marey-lès-Fussey, on the boundary with the Hautes-Côtes de Nuits. Surrounded by pasture, the vineyard lies at around 470 metres and is farmed organically, using biodynamic methods and plant-based preparations. After crushing, the grapes undergo a long pressing cycle and fermentation with indigenous yeasts. Maturation begins in barrels and continues on fine lees in stainless steel. The wine is not fined; interventions remain limited, accompanying the expression of Aligoté and its high-altitude origin through a patient, carefully managed cellar process.
