Description

Chanterêves' Miarlons du Bas comes from Aligoté planted in 1980 on a steep slope above Les Monts de Fussey and immediately below Mainbey. The vineyard follows organic principles, with biodynamic methods and plant-based preparations. In the cellar, crushing precedes slow pressing; fermentation starts with indigenous yeasts and a pied de cuve. The wine matures in oak barrels before being assembled in stainless steel on its fine lees. The absence of fining and a restrained approach to intervention complete this single-site interpretation of Aligoté from Burgundy's higher hillside vineyards.
