Description
Chanterêves' Les Monts de Fussey is an Aligoté grown above Échevronne, just below Fussey, at around 400 metres. The slope faces southeast and has stony limestone-marl soils, with abundant active calcium that limits vigour and yields. Organic cultivation incorporates biodynamic methods and plant-based preparations. Crushed grapes are pressed slowly and fermented with indigenous yeasts. Barrel maturation is followed by a period on fine lees in stainless steel. The wine's identity remains connected to this particular hillside site through a restrained cellar approach that accompanies the fruit without elaborate intervention.
