Description

Chanterêves' Bourgogne Hautes-Côtes de Beaune Mainbey comes from Chardonnay on the slope of a valley near Fussey, at around 470 metres. Very stony soil contains large limestone blocks. Mainbey is the estate's largest lieu-dit, with separate parcels devoted to Chardonnay and Aligoté. For this white wine, crushing and prolonged pressing precede fermentation with indigenous yeasts. Maturation moves from oak to stainless steel, retaining contact with fine lees. Organic vineyard work and restrained cellar intervention accompany this distinctive high-altitude origin, allowing the cuvée to remain clearly connected to its named site.
