Description
Chanterêves' Bourgogne Hautes-Côtes de Beaune Les Monts de Fussey is a Chardonnay from the southeast-facing hills above Échevronne. The vineyard lies at around 400 metres on a moderate slope with limestone, marl and abundant stones. Active calcium in the ground helps restrain vine vigour. In the cellar, grapes are crushed and pressed slowly before fermenting with indigenous yeasts. Maturation in barrels is followed by resting in stainless steel on fine lees, consistent with a low-intervention handling of the fruit that keeps the wine connected to its specific hillside origin.
