Description

Château d’Yquem is the Sauternes awarded Premier Cru Supérieur status in the 1855 classification. It comes from Sémillon and Sauvignon Blanc grown across a mosaic of soils on the Sauternes hills. Production depends on the development of noble rot, Botrytis cinerea, and the hand selection of berries that have reached the desired concentration. Experienced pickers work according to the condition of the fruit, with no assumption that every harvest will yield a suitable wine. In the cellar, barrels accompany fermentation and maturation, continuing a tradition built around the precision of selection in the vineyard.
