Description

Château Simone's Palette Blanc comes from old vines on predominantly north-facing limestone slopes near Aix-en-Provence. Clairette leads the blend, supported by Grenache Blanc, Bourboulenc, Ugni Blanc and Muscat Blanc. Hand harvesting and careful grape selection precede pressing in traditional vertical presses. Indigenous-yeast fermentation and extended oak maturation shape a white intended to develop over time. Floral and fruit notes are accompanied by a restrained woody accent, while bottle age brings greater depth. The estate's signature lies in the balance between delicacy and intensity, rooted in mature vineyards and a patient approach to winemaking.
