Description

Château Simone's Palette Rosé follows a Provençal tradition of deeply coloured, substantial rosé wines. North-facing limestone slopes supply a blend led by Grenache and Mourvèdre, alongside Cinsault and other historic varieties grown on the estate. Hand harvesting and selection in both vineyard and cellar are followed by vertical pressing, with a proportion of saignée juice included in the blend. Maturation takes place entirely in wood, with the wine kept on fine lees. Its pronounced colour introduces a vinous character in which body and energy are balanced by finesse and delicately expressed fruit.
