Auxey-Duresses Clos du Moulin aux Moines Vieilles Vignes Monopole comes from the upper part of the estate’s historic vineyard, where the wall rests on rock and red clay soils contain more limestone. Its Pinot Noir includes plantings from 1952 and 1954. After hand harvesting and sorting, the grapes are destemmed; slow fermentation in concrete uses indigenous yeasts and pumping over. Maturation continues in oak without final fining or filtration. The cuvée is distinguished by its depth and substantial texture on the palate.
