Clos du Moulin aux Moines Bourgogne Blanc Clos de la Perrière Monopole is made from Chardonnay in Corpeau, south of Puligny-Montrachet and Chassagne-Montrachet. An old stone wall surrounds the vineyard and encourages generally earlier ripening than in neighbouring parcels. Its south-facing soils combine sand, clay and limestone. Following hand harvesting, vineyard sorting and slow pressing, fermentation begins with indigenous yeasts in a large wooden vat. Maturation continues in the same vessel without lees stirring or racking, and the wine is neither fined nor filtered.
