Description

Clos du Moulin aux Moines Bourgogne Rouge Clos de la Perrière Monopole is a Pinot Noir from Corpeau, south of Puligny-Montrachet and Chassagne-Montrachet. The south-facing vineyard on silt and limestone is enclosed by an old stone wall that encourages early ripening. Grapes are harvested and sorted by hand, with destemming adapted to the vintage. Fermentation with indigenous yeasts takes place in concrete and includes pumping over. Maturation follows in oak without racking; the wine is neither fined nor filtered before bottling.
