Description
Clos du Moulin aux Moines Chorey-lès-Beaune Les Beaumonts comes from Pinot Noir north of Beaune, near Aloxe-Corton and Savigny-lès-Beaune, at the foot of the slope. The soil consists of marly limestone alluvial deposits, with southern and southeastern exposures. Hand-harvested grapes undergo two stages of sorting. Slow fermentation takes place in stainless steel with indigenous yeasts and pumping over. After maceration and pressing, the wine is transferred to previously used oak barrels for maturation, then bottled without fining or filtration in the cellar.
