Description

Clos du Moulin aux Moines Monthélie Sous le Cellier comes from Chardonnay in the northern part of the appellation, on a steep slope at the edge of the village. The name refers to its position below the cellars of the houses. The soils combine silt, limestone and sand at around 280 metres above sea level. Grapes are hand harvested and sorted in the vineyard before slow pressing. Spontaneous fermentation takes place in barrels, followed by maturation without racking. The wine is bottled without fining or filtration.
