Description

Clos du Moulin aux Moines Pernand-Vergelesses Les Combottes comes from Chardonnay on a slope extending the Corton-Charlemagne hillside. The southwest-facing parcel, at around 350 metres, has white marl over clay and limestone. Hand harvesting includes sorting in the vineyard; slow pressing precedes the transfer of the juice into oak barrels. Fermentation begins with indigenous yeasts, and maturation proceeds without lees stirring or racking. The wine is bottled without fining or filtration, following a restrained approach to handling throughout its time in the cellar.
