Description

Clos du Moulin aux Moines Puligny-Montrachet Au Paupillot comes from a parcel north of the village on the road towards Meursault, acquired by the Rollin family in 2022. Chardonnay grows on east-facing clay-limestone soils containing gravel. The grapes are hand harvested, sorted in the vineyard and pressed slowly. Fermentation takes place in oak barrels with indigenous yeasts. Maturation continues without lees stirring or racking, and the wine is neither fined nor filtered before bottling, following a restrained approach to cellar handling.
