Description

The red Saint-Romain Sous Roches from Clos du Moulin aux Moines comes from Pinot Noir on clay-limestone soils at around 360 metres, with southern and southwestern exposures. Altitude and cold air currents through the valley create a cool setting. Hand harvesting is followed by two stages of sorting; the proportion of whole bunches is adapted to the vintage. Slow fermentation in concrete uses indigenous yeasts and includes pumping over. The wine matures in previously used oak barrels without subsequent fining or filtration.
