Clos du Moulin aux Moines Volnay Les Famines is a Pinot Noir from the lower part of the Volnay hillside. The vineyard has deep, gravelly soils composed of red clay and limestone. Hand harvesting is followed by two stages of grape selection. Destemming is adapted to the vintage, and slow fermentation takes place in wooden vats with indigenous yeasts, accompanied by pumping over. After pressing, the wine matures in previously used barrels and is bottled without fining or filtration, preserving the estate’s restrained approach to handling.
