Description

El Tamboril Tinto comes from a small parcel of Garnacha in the Sierra de Gredos, at around twelve hundred metres above sea level. Its northern exposure and granite soils make ripening slow, so picking can extend into October. Old vines and the vineyard's small size explain the limited production of this cuvée. Comando G harvests the fruit by hand and ferments it as whole clusters with natural yeasts, using gentle maceration. Subsequent maturation in a large oak vessel completes an approach focused on expressing the particular identity of this mountain site.
