Piero Coppo Riserva del Fondatore is the traditional-method sparkling wine dedicated to the founder of the Canelli estate. Pinot Noir and Chardonnay come from vineyards on limestone marl and are harvested by hand, selecting healthy, ripe bunches. Gentle pressing precedes fermentation in French oak and lees contact accompanied by stirring. After blending, bottle fermentation begins an extended phase of maturation on the lees. The profile suggests bread crust and yeast, with a creamy texture and an austere approach intended to develop over time in the cellar.
