Damijan Podversic’s Ribolla Gialla 2021 is a skin-contact white from the Collio, made from Ribolla Gialla grown on Monte Calvario near Gorizia, on ponca soils of marl and sandstone. Fermentation with the skins lasts 60–90 days in truncated-conical oak vats, followed by three years in 20- or 30-hectolitre casks and one year in bottle. This approach draws structure from the grape skins and distinguishes the wine from a white made without maceration.
