Description
David Duband's Bourgogne Pinot Noir comes from southeast-facing vines on silt-and-pebble soils. The grapes are harvested and sorted by hand; vinification retains a proportion of whole bunches and includes foot cap-punching and pumping over. After pressing, the wine rests before entering previously used barrels. A further period in tank precedes bottling without fining or filtration. The cuvée belongs to the work of the Chevannes estate, where measured extraction and the use of whole bunches accompany the search for finesse in Pinot Noir's expression.
