Description

David Léclapart’s L’Astre is a Premier Cru Blanc de Noirs Champagne made exclusively from Pinot Noir grown in Trépail, in the Montagne de Reims. The vineyards lie on Campanian chalk and are cultivated according to organic and biodynamic principles. Fermentation uses indigenous yeasts and malolactic fermentation occurs spontaneously. No fining, filtration or cold stabilisation is practised in the cellar. The work includes the use of old barrels and bottle maturation on the lees. The absence of dosage completes this interpretation of Pinot Noir within the family’s production.
