Delamotte Rosé brings together the house’s emphasis on Chardonnay and the contribution of Pinot Noir. Chardonnay from Le Mesnil-sur-Oger, Avize and Oger meets Pinot Noir from Ambonnay, Bouzy and Tours-sur-Marne. These origins underpin a profile that Delamotte describes as both complex and subtle. A salmon-pink colour accompanies delicate suggestions of strawberry, raspberry and wild strawberry. The house recommends serving it cool, at around eight degrees, in a tulip-shaped wine glass. Its suggested pairings include tuna or salmon sashimi and desserts featuring red berries, reflecting the wine’s fruit-led expression.
