Description

Delas Haute Pierre is a red Châteauneuf-du-Pape based on Grenache with Syrah. The vineyards occupy alluvial terraces of red clay with rounded quartz pebbles. After destemming and crushing, fermentation takes place in concrete, followed by maceration and malolactic fermentation in vats. Maturation continues in large oak vessels. The general technical sheet describes a garnet-coloured red with spicy aromas, a rich body and a closely woven tannic structure. Liquorice returns on the finish, and the producer suggests serving it with stews and dishes drawn from traditional Provençal cooking.
