Blanc Fumé de Pouilly expresses Sauvignon Blanc through the exacting work of Domaine Didier Dagueneau in Saint-Andelain. Its grapes come from an area where clay, limestone and flint contribute to the diversity of the vineyards. Hand harvesting, restricted yields and gentle pressing are followed by barrel work and lees ageing, with maturation completed in stainless steel. The aim is to give the variety substance and the ability to develop while retaining freshness.
