Les Jardins de Babylone Sec comes from Didier Dagueneau's project on the hillsides of Jurançon, at the foot of the Pyrenees. The amphitheatre-shaped vineyard, with clay and pebble soils, contains several local varieties and is tended with close attention to grape maturity. The dry version sits alongside sweet and demi-sec wines in the exploration continued by Louis-Benjamin Dagueneau and Guy Pautrat. Their reference point is balance between fruit richness, texture and acidity. Fermentation and maturation use different vessels, selecting the approach that best serves the expression of the wine rather than following a single fixed formula.
