Description

En Remilly places Jean-Claude Bachelet's Chardonnay on a south-facing site in Saint-Aubin, close to the vineyards of Puligny-Montrachet. It is one of the white Premier Crus through which the family explores differences between the sites of its appellation. Soil cultivation and controlled yields shape the work in the vineyard, while fermentation proceeds slowly with indigenous yeasts in the cellar. Maturation on fine lees in French oak spans two winters, seeking depth, structure and finesse. This interpretation of the site is grounded in careful grape growing and the time devoted to maturation.
