Jean-Claude Bachelet's Le Charmois comes from an east-facing vineyard on the side of Saint-Aubin adjoining Chassagne-Montrachet. This white Premier Cru offers a different perspective from the south-facing slopes elsewhere in the appellation. The family cultivates the soil and maintains moderate yields, giving grape quality a central role in defining the wine. Fermentation with indigenous yeasts proceeds slowly, followed by extended maturation on fine lees in French oak. Two winters in the cellar accompany the pursuit of structure and depth, with the identity of the vineyard remaining the guiding reference throughout the process.
