Barolet-Pernot's white Saint-Romain combines Chardonnay from small village parcels tucked into the hills of the Côte de Beaune. The elevated setting and limestone soils contribute to a lively character, with fruit that retains a pleasing fleshiness. Gentle whole-bunch pressing and indigenous yeast fermentation reflect an approach centred on purity. Maturation combines previously used oak and stainless steel, balancing volume with freshness. Stone fruit character meets an oyster-shell impression, creating a clear, juicy and measured white. Its appeal lies in the way supple texture and a bright mineral edge work together across the palate.
