Aux Allots is the Nuits-Saint-Georges from Édouard Confuron's small personal domaine, made from a vineyard worked under a farming lease. Its Pinot Noir combines dark red fruit with spice and a suggestion of white pepper. The cuvée forms part of the project launched in 2021 by François Confuron-Gindre's son, bringing a personal search for finesse to the family's winemaking tradition. In the cellar, his approach gives a prominent role to whole bunches and postpones sulphur additions until the end of vinification. It explores another facet of the Côte de Nuits alongside his Vosne-Romanée wines.
