Description

Domaine de la Cras Bourgogne Rouge introduces the Pinot Noir grown on the hills overlooking Dijon. The grapes come from En Bessy, where clay and limestone soils shape the vineyard, and are picked by hand. Marc Soyard combines destemmed fruit with whole bunches and allows indigenous yeasts to carry out fermentation. Maturation takes place in previously used barrels, followed by bottling without fining or filtration. Its expressive, energetic character reflects a project dedicated to reviving Dijon’s vineyard heritage through careful attention to the grapes and a restrained approach in the cellar.
