Description

Hermaïon comes from a small vineyard personally owned by Marc Soyard near Ladoix, separate from the Domaine de la Cras holdings overlooking Dijon. This old-vine Pinot Noir is bottled as Bourgogne and grown organically, with biodynamic practices. Careful hand sorting is followed by whole-cluster fermentation with indigenous yeasts and gentle extraction. The wine matures in oak barrels and is bottled without fining or filtration. It represents a particularly personal aspect of Soyard’s work, bringing together a single vineyard origin and restrained cellar handling rather than a blend of fruit from across the estate.
